Vanilla Meringue Cookies from Trader Joe's

We convinced them to make their wonderful meringues on a larger scale. Thanks in large part to this partnership with Trader Joe's, this once-small bakery is now the largest manufacturer of meringues in North America.

Trader Joe's Vanilla Meringues are light and airy, crunchy and crispy at the same time. How do they do that? We'll chalk it up to the miracles of traditional French baking. Or maybe it's the all natural ingredients, the utter lack of artificial ingredients, or the wispy peaks atop each goodsized meringue (about an inch in diameter). Whether eaten straight from the tub or crumbled over a bowl of fresh fruit or your favorite flavor of ice cream, they're good."
